The ultimate weekday lunch

Whenever I’m in doubt what to eat for lunch, usually I end up eating salads. Salads are so simple to make and oh so yummy. For this salad you only need three ingredients and five minutes. Quick, simple and beautiful.

The key here is the quality of the ingredients. If you use lovely fresh ingredients even the most basic meal like this one will taste absolutely amazing. 

Arrange all ingredients on a plate or in a small bowl like I did, drizzle over the olive oil and serve straight away!

  • 6 Plum tomatoes 
  • 125g Mozzarella di Bufala (mozzarella made from pasteurized water buffalo’s milk)
  • 4 slices of Serrano ham
  • Olive oil

Cherry yoghurt with banana&crunchy oatmeal topping

I love breakfast, it is my favorite meal of the day because it gives  your body the kick you need to go through the day. It is extremely important what you eat after waking up, I truly believe in you are what you eat. So for me breakfast equals healthy. 

Today I wanted something crunchy and I decided to make this dreamy yoghurt bowl, it took me five minutes to make. 


Start with the crunchy oatmeal. Heat the coconut oil in a non sticky pan then add the oatmeal and strirr it continuously until it turns into golden brown and starts to smell. Let it cool for a little then stirr in the honey. 

Until it cools down completely prepare your yoghurt. First spoon your cherry jam in the bottom of a cute mini jar, then scoop in the yoghurt. Slice the banana and top the yoghurt with the banana and the crunchy oatmeal. Delicious!
